December 17, 2008 (Recipe Day!)
Welcome to my new ‘you are what you eat’ pages. Since I can POST now, instead of just adding to a never-ending page, I’m going to start making this more interesting - or at least that’s the plan.
I’m going to start including photos of my food, and, when I’m particularly proud of what I’ve done, recipes. I’m also going to start recording a bit more about how I feel about my food & what I’m eating.
My 2009 goal is to record at least SOMETHING every day. Please feel free to comment - offer suggestions, recipes, critiques, etc.
BUT - on to today’s record.
Breakfast: cookies (working at home does have its downfalls)
Lunch: Salad of deliciousness, 1 pc banana bread
Dinner: African peanut soup; salad; bread; wine
Water: 32 oz
Exercise: 60 minutes elliptical; 30 minutes yoga
The recipe (which I modified slightly from the one at A Year of Crockpotting):
- 1 yellow onion, diced
- 2 bell peppers, chopped
- 4 cloves minced garlic
- 1 (28 oz) can of crushed tomatoes, with liquid
- 8 cups broth (I usually use chicken broth I’ve made from my whole roasted chickens)
- 2 tsp black pepper
- 3 TB chili powder
- 5 dashes hot sauce
- 1 cup cooked, shredded chicken
- 1/2 cup uncooked brown rice
- 1 cup peanut butter (to add later)
The Directions.
- Wash and chop all of the vegetables, and put into the crockpot
- Add the entire can of tomatoes, the uncooked rice, and the spices.
- Pour in the vegetable broth and shredded chicken
- Cover and cook on low for 6-8 hours. The soup is done when the onions are fully cooked and are translucent.
- Stir in peanut butter, and cook on high for 20-30 minutes, or until fully heated through.
Enjoy! I like mine with a slice of crusty bread.

My 6 quart crockpot was about 1/2 full, which would lead me to believe that it makes approximately 12 cups of soup, maybe a bit more. I’ll try to be better at noting servings in the future. I do know that it makes enough for 2 people for dinner AND a few meals of left-overs. (I love to freeze individual portions of soup & take them for lunches on days when I can’t figure what else to take for lunch.)

I’m glad you like it. Food (and running) are a couple of my big passions, although I think I may have to work on my food photography skills.

Great idea! Now we can eat along with you! I’m guessing that if you do this for a whole year, your eating will become very clean. And you’ll inspire the rest of us. Excellent.

That’s what I’m hoping. This is more fun than tracking calories or counting points, but it still keeps me accountable (or would if I actually owned up to HOW MANY cookies I’m eating for breakfast).
I hope it’s enjoyable. And I hope my food photography skills improve.
